Coconut Lime Baked BBQ Wings

You will never fry chicken wings again once you taste these crispy baked chicken wings! The secret ingredient: Baking Powder! It may seem like an unlikely pairing, but the chemical reactions in the baking powder draws the moisture out of the skin allowing it to evaporate, thus making the skin light and crispy. These guilt-free wings are gluten-free too! They are perfect for a football watch party or a child’s birthday party. The homemade Cilantro-Lime BBQ sauce takes these wings to the next level!

Coconut Lime Baked BBQ Wings

Prep Time: 10 mins
Cook Time: 50-55 mins
Yields: 24

  • 24 chicken wings
  • 1 tablespoon of baking powder
  • 1 ½ teaspoons of salt
  • 1 teaspoon of onion powder
  • For the Barbecue sauce:
  • 2 cups of ketchup
  • 1 cup of apple juice
  • ¼ cup of brown sugar
  • ½ tablespoon of black pepper
  • ½ tablespoon of onion powder
  • ½ tablespoon of garlic powder
  • 1 tablespoon of lime juice
  • 1 teaspoon of Worcestershire sauce
  • 1/3 cup of cilantro
  • ¼ cup of Dijon mustard

  1. Arrange the wings in a single layer on a wire rack. Line a baking sheet with aluminum foil. Place the wire rack on top of the baking sheet and drizzle with olive oil.
  2. Bake for 25 minutes then flip. Drizzle the other side with olive oil and bake for 25 more minutes or until golden brown.
  3. For the sauce, place all ingredients in a medium saucepan. Bring to a simmer then reduce to low heat; cook for 30 minutes.
  4. In a large bowl, add the wings and barbecue sauce. Toss until completely covered. Garnish with cilantro. Can be served hot or cold.

Make sure to line the baking pan with aluminum foil before placing the wire rack on top. This will protect your pan and will speed up the cleaning process.

Be sure to use BAKING POWDER not baking soda.
